Soft urad lentil fritters soaked in whipped yoghurt, one of North India's best-loved snacks. Cool, tender and refreshing, finished with tamarind chutney and toasted cumin.
How to make it. Mix with water, rest the batter, fry the fritters and soak them in warm water for a few minutes. Drain and cover with whipped yoghurt.
Best for. A great starter for warm days or festive meals such as Holi and Diwali.
