Asafoetida powder, hing, is a strongly aromatic spice used in very small amounts. When warmed in oil or ghee it becomes rounder and adds a characteristic base note to pulse dishes.
How to use it. Add a pinch to hot oil before adding cumin, onion or lentils. You need very little: start small and adjust in future cooking.
Best for. Tadka for dal, sambar, vegetarian dishes and recipes made without garlic or onion.
