Kings mace, called javitri in Hindi, is the aromatic layer surrounding nutmeg. It has a warm, slightly sweet and concentrated fragrance. It is used in small quantities to scent rice dishes, curries and sweet preparations.
How to use it. Add a small piece during cooking and remove it before serving when using it whole. You can also grind it just before use to make the most of its aroma.
Best for. Ideal for biryani, korma, pulao and homemade spice blends. Use it sparingly, as its aromatic flavour comes through readily.
