The rice version of dhokla, tangier and with a denser crumb. Recognisable by its black pepper note and mustard tempering.
How to make it. Mix with water and yoghurt, rest, pour into a tin and steam. Add the mustard and sesame tempering before serving.
Best for. A snack or light dinner. Keeps well overnight and reheats by steaming.
