Kings bay leaves bring a warm, herbal aroma to slow cooking. They are used whole so their flavour infuses gradually. They are useful in Indian cooking as well as stews from other cuisines.
How to use it. Add one or two leaves at the start of cooking rice, broths or curries, then remove them before serving. Store them in a dry, tightly closed container to retain the aroma.
Best for. Ideal for biryani, pulao, soups, pulses and stews. Use them whenever a recipe calls for whole bay leaves.
