Red Taichin beaten rice is a Nepali-style flattened rice, made by parboiling red paddy and flattening it while the bran is still on the grain, which gives it a nuttier flavour and a slightly coarser texture than the white variety.
How to use it. Soak the flakes briefly in water or milk until they soften, then eat them as they are, or temper them with oil, onion, spices and vegetables in the same way as poha.
Best for. Best for a Nepali or North Indian breakfast, a quick snack with chai, or a savoury flaked-rice dish.
