Gram flour, also called besan, from Schani is a fine flour widely used in Indian cooking. It has the characteristic flavour of chickpeas and gives body to batters, doughs and sauces. The 1 kg pack is practical for frequent recipes.
How to use it. Mix besan with water and spices for pakoras or chilla, or stir it gradually into a sauce. Whisk it well before cooking so that no lumps remain.
