Whole cumin, known as jeera from Schani with slender seeds and a warm, earthy, pronounced flavour. It is a useful choice when you want a familiar spice or ingredient for Indian cooking. Its character works equally well in everyday recipes and traditional preparations.
How to use it. Warm the seeds in oil or ghee at the beginning of cooking until fragrant, taking care not to burn them.
Best for. Tadka for dal, jeera rice, dry curries and pickles. Keep the pack tightly closed in a cool, dry place.
